This hearty soup is one of my favorites to make during the cold season. I love whipping up this delicious recipe which is packed with flavors including protein and fiber. Today, I will share this recipe and hope it becomes a favorite of yours, especially if you love spices.
Lentils are one of my favorite ingredients for soups. It is super high in protein and fiber, so they’re filling and hearty. This recipe includes autumn blend lentils. Lentils cook quickly and provides a great texture to thicken any soup.
To Prepare:
- 2 chopped onions
- 7 chopped celery
- 10 chopped garlic cloves
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 2 teaspoons turmeric
- 2 teaspoons ground cumin
- 2 teaspoons ground ginger
- 2 bags of Autumn Blend Lentils
- 4 cups Vegetable broth
- 8 cups of water
- 18oz of organic strained tomatoes
- 2 freshly squeezed lemons
- Entire container of Spinach or Kale

To Make:
Step 1:
Heat the oil in a large pot. Add onions, celery, carrot. Cook until onions are translucent and slightly browned. Then add garlic and spices to cook about 2 minutes.
Step 2:
Add lentils, water, broth, and strained tomatoes. Stir. Bring the soup to a boil, cover and reduce to simmer for 30 minutes.
Step 3:
Once it’s simmers, add in freshly squeezed lemon juice, kale or spinach until the greens have wilted. Serve immediately and top with your desired toppings.
Step 4:
For garnishes, I like to add some sour cream, guacamole, salsa with tortilla chips. A little spicy, a little creamy and so delicious!
This soup is perfect and easy to make for a huge family. The comforts of winter starts with a warm bowl of soup. Yummy!
